Nearing the end of my tenure at Arzak, I asked Chef Juan Mari to arrange a stage for me at Noma restaurant in Copenhagen, Denmark.

The time I spent at Noma were exhilarating.  It was a great pleasure working with the amazing ingredients of the Nordic regions.  Working at Noma gave me a new awareness and perspective on local ingredients.  I came to embrace the idea of preserving the relationship between ingredients and their natural environment.
