Vail Cascade, Chap’s Grill & Chophouse 2002-2006

In 2002, I joined the culinary team at the Vail Cascade Resort & Spa as Chef de Cuisine at Chaps Grill & Chop-house under Chef Michael Beck. 

Chaps Grill and Chop-house featured the finest in regional game, traditional grilled foods and fabulous seafood selections [flown into the Rocky Mountains overnight from the coast], serving up a combination of elegance and a contemporary twist on traditional American food.

I was hired as a chef de partie at Chap’s and pushed my way up through the ranks of the kitchen within a few weeks.  This was my first job managing a kitchen in a corporate setting and the first opportunity in my career to write menus and develop my own interpretation of contemporary American cuisine in a restaurant.

It was a demanding job and I matured into a distinguished leader in the kitchen during those 4 years .  In my third year as Chef de Cuisine,  Chaps was subsequently awarded the prestigious AAA Four Diamond Award making it the only Four Diamond chop-house in Colorado.
