Guillaume at Bennelong 2006-2008

I arrived to Australia in late 2006 .  The Sydney Opera House served as my next professional home, with a position as Chef de Partie [on fish] for renowned Chef Guillaume Brahimi at his internationally acclaimed 3 hat restaurant Guillaume at Bennelong.

Working in the iconic Sydney Opera House was amazing.  Chef Guillaume [who is a protegé of the world-renowned chef, Joël Robuchon] was very assertive in his command and demanded absolute perfection among the entire operation.  Working at Bennelong tightened my game in the kitchen as I became a much more disciplined cook and gained a variety of techniques.  I had graduated to a much higher caliber of cooking.  I completed my 1 year contract and prepared myself for the next leg of travel.
